Advice on auto back up of photos?

I have yet to find a piece of software that I can tell exactly what and when to backup to a local NAS, including exclusions. I have tried Memeo, but it is a non-stop service that doesn't properly respect files that are inuse (e.g. the iTunes catalog) and seems to work in an all-or-nothing mode. I've been thinking about writing myself some perl scripts and running them under Cygwin. That way I could get the logic that I want.
I will not use an online service at 1 MB / sec upload speeds. Ain't nobody got time for that, not the way I generate data.
