Don't use the spherical eggplants, use the long, skinnier kind, nor too large. Slice them thinly lengthwise, lay them in a colander in layers, sprinkling each layer with salt, and let stand a couple of hours. Wash off the salt, dry, and fry the slices in small batches to golden.
