50mm and 85mm or 24-105mm for EOS R?

In terms of sharpness and picture quality, how does the 24-105mm compare to getting a dedicated 50mm and 85mm from Canon?

Technically , each of the 50 and 85 mm lenses  are likely  to give  a measurable improvement  over the quality  achieved  by the 24 – 105 mm at the 50 and 85 mm settings .
But  these days with latest lens technology ,  it  takes  serious scrutiny of images side-by-side ,  at high magnification ,  in your photo editor software  to see  the difference .

Yeah I'd say you'd buy the 50mm or 85mm more for the style of photos that they make possible, with the ability to completely separate the subject from the background or shoot more effectively in low light. They will be sharper, but that's not the main reason to buy one. Whereas obviously you buy the 24-105 for the versatility.

I've always been told that the prime lenses will have the best sharpness quality and performance over your typical zoom lenses.

The variation is that the prime lets in 2.3 more stops of light.
For classic head and shoulders pictures, the 85 f 1.8 is an excellent lens.
It is great for f2. The 24-105 is rather soft at the edges.

The age old question...primes vs zoom. I would go with the primes, unless you will need video. The primes will be best for any indoor or outdoor low light photos where movement is involved. You will get a lower f stop with primes...1.4, 1.8, 2.8.

The 24-105 is f4, so not good for low light unless used for very still photography like portraits. The IS will help here. Any family photos indoor where people are moving around will require high iso at f4. IS won’t help here where people are moving.

For video, the 24-105 is King! You get a zoom range and an awesome IS. You won’t find 50 and 85mm good lenses with IS.
