Category or Date for cataloging in Lightroom?

Why does Adobe default to date vs category?  I've recently noticed some people suggesting cataloging via category, which is completely different from what I've been doing.  

Just throwing this out here to see what others are doing for this?

I generally use the default "date" system for my images. I will rename some when it's a special trip to a specific place like "New Mexico" or "Oregon". There are many ways to do it. You can bypass using cataloging by the use of "key" words to pull up images. That way you can quickly pull up "BIF" or "waterfalls" or any number of images if you use key words.

If I'm understanding your right, I catalog by date.
