I just bought a used Nikon D810 and wondering if it's accidentally left on, will it shut off/go into sleep mode after no activity?

Did you turn the camera on and set it down?

The answer is “yes”. The menu item is Standby Timer. At least, that’s what the manual says.

Yup, it will go to sleep. I leave my D800 on for literally days at a time, no noticeable drag on the battery.....

Custom setting C2 - 'Standby Timer' adjusts the time the camera's light meter stays on. Default is 6 seconds, but if you're doing some multiple exposures and want on longer, this is where you adjust it. There are setting for 4secs to 30 mins, or 'No Limit' in which case the camera will stay on until turned off.
Custom setting C4 - 'Monitor Off Delay' controls the time the monitor and control panel lights stay on after last use. That VGA screen is thirsty and the monitor and control panel lights are the biggest power drains in the entire camera. Live View uses the monitor continuously so keep that setting low.
Having said all that, my D810 still does a good day's shooting on one charge.
Hope that helps,
Neil.

I guess it's the old adage:
