Where is the best place to pivot the camera for panoramic shots?

Hi Adam. You need to think about where the focal plane of your camera is and rotate around that. It is not as technical as it sounds and there are special panoramic heads available to help. Nodal ninja do a range of them, I use a Manfrotto 300N. There are many tutorial clips available on YouTube.
It's great fun once you get into it and very rewarding. Give it a try! Hope this helps, Neil.

I wasn't gonna say anything as I don't shoot panorama's by stitching two or more photo's together. But back in the film days I read several time's that to do it properly, there's a tripod head that let's you center the camera on the film plain. What I do is if I know I want to make a pano, I have the grid in my view finder and use the middle of the grid to frame the photo. Fore 4x8, 5x10 ect, I just crop the photo. My though on the best way to shoot a panoramic is with a Mamiya 617! I ever find one and have the money, I'm getting it.

If you want to adapt to an existing tripod, you need a "nodal slide" to get the sensor over the (vertical) axis of rotation. Then you will be able to compensate for parallax distortion.
