Wide Angle Distortion when using wide angle lenses?

When using wide angle lenses, some times I notice some distortion going on, this seems to happen most when using a wide angle lens.  

Why does this happen?

Now I know this can be fixed in Lightroom.  However is there anything that can be done in camera to prevent this distortion?  I'm referring to buildings, walls, etc., leaning inward.  

Or is this a classic situation of what you see is what you get and just deal with it in post?

Every lens has an "angle of view" and as the lens sees stuff further & further away, it is smaller in the frame.  When you tilt the lens up/down/sideways - the stuff closer to you will be larger than the stuff further away

With buildings the angle of the lens sees more & more sky, therefore the buildings take up less & less space - and so appear leaning inwards.  

eg-
Make: FUJIFILM
Model: FinePix S5000
ISO: 200
Aperture: f/7.0
Shutter speed: 1/800 sec
Captured: Mon, 14 Aug 2006 13:41pm

Note my hand as the universal lenshood!

You have 2 solutions... a) buy a special purpose "tilt & shift" lens, or b) use any half-decent photo editor with a button for 'perspective control' and play with making your verticals - vertical

Phil's explanation is very good and — if I may —
I will suggest a "c" or third solution:

While setting up, make sure the camera is straight
in all three axises and, eventually, compose loosely
so you have more cropping options.
