A contractor or employee?  I've not hired one before however may start too for some larger jobs I have.  Obviously both of these have different tax paths, and I want to make sure I do this correct.

It is simpler to contact a second shooter as its fee is
added to your costs… and to your final invoice.

A second shooter is generally considered a "work-for-hire" employee, because all you tell them is, "go take photos". That means contract.

You'll want a written and signed agreement that clarifies what they can and cannot do with the images they capture (that's up to you), where and when they perform the job duties, when they get paid. And that you "own" the images. Make them change the copyright setting in the camera before you begin.

You'll want to provide memory cards to them, and collect them before they leave. Trust me on that. (If you allow them use of the images for their portfolio, you'll have to supply them to the shooter.)

OMG stay away from setting them up as an employee.  Contractor, contractor, contractor.  

Follow Gary's advice above, the guy gave a dialed in answer.
