Is better the save a photo that you have been working on at the highest color bit?

Are you refering to 8 bit versus 16 bit mode in Photoshop?

In which case, it's always a good practice to keep it in 16bit mode untill a final output is made. Photos retain the best quality when editing in 16bit mode.

I've never played around with the "bits", is there that much difference?

I always save my photos in the highest settings I can. If you save other wise later if you need to do something with image, it's easier to reduce in size than gain in size.
