Backlighting help

Backlighting is something I have been wanting to work on for a bit, but weather put a damper on that for months. Back at it again yesterday evening. 

This is the first "successful" shot I have gotten so far. In the evening, the horses are tired from a day of riding, so they aren't terribly interesting at this time, however, this was more about lighting than it was about composition and horse posture/pose. I also miss the super golden light from the last 10-15 mins because of the trees (Pretty much the same problem everywhere here. Few places can you actually see the sunset). 

I digress. This was the best I could get last night with these circumstances. CC would be appreciated. Looking for cc on mostly lighting and edits to exposure/shadows etc.

I keep getting "Files too large", even though they are under 15mb, so here is a link instead. Hopefully the colors etc are kept intact when posting imgur links

This first photo feels more appropriate for the timing of the sunset. Feels less harsh.

For this one, the sun was probably still too high and I tried to block out the intense highlights, but the horse kept moving. How would you adjust this shot to improve the lighting? Is it just too early for this shot? I lost the sun in about 5 mins after this shot.   The horse is under exposed, so I was definitely  getting too much light

is It better to use a smaller aperture and lower shutter speed for these types of shots? I am thinking that might change how the sun light/highlights look.
