What is the best way to photograph outdoor B&W still photography?

pay special attention to their composition, ensure you're close enough and that your subject fills the frame. Pay special attention to the background and areas that are out of focus. Ensure there are no distracting elements or things that will haunt you later when reviewing your photos. Lighting is very important.

Usually you will be viewing or shooting in colour (and converting to B&W). CONTRAST is the big difference. You can have a good colour shot that contains a lot of middle tones and when converted to B&W looks "flat". You need significant contast between the lights and darks to get a good B&W image.
Takes some of your photos and "convert" them to B&W. That exercise will begin to show you the difference. Training yourself to "see" in B&W is not as easy as it sounds and takes practice.

Shoot, learn and share. It will make you a better photographer.

If a picture is about darks and lights, and is strong graphically it's usually a candidate for black and white.

Look at the picture in my Burning Man gallery of the girl on the merry-go-round. I completely overlooked this image for almost a year because the color wasn't so special. On second glance I noticed it had a strong focus and it was very graphic. I desaturated it, brought out the strong lights and darks and threw some tonal contrast on the sky to bring out those wonderful clouds. This picture was nothing in color. So
