I talk with many photographers that look at product photography as a small-scale business, accepting assignments for a few products at a time. I suspect that may have something to do with working through the freelancing sites, bidding jobs for 10 or 12 products that are shipped to the photographer, photographed and then returned or, in some cases, kept as a partial or "bonus" payment. That's one way to go about it.

I also know several photographers that generate substantial income from their product photography, often with only a few local clients. The difference is that those photographers take their services to the client and in terms of potential earnings, it's like night and day. It's also not hard to do, with the right equipment.

Let's take a local jeweler as a potential client. They need photos for television and screen ads, brochures and websites on a regular basis. Why not offer to provide the business owner with professional-quality photos taken on-site, with no merchandise ever leaving the store?
