First question is what f-stop are you using? The answer will most likely be you are shooting with too large of an aperture. My advice is to shoot in manual, set your f-stop for DOF, set your shutter to freeze the motion and have the camera set to Auto ISO. I you have enough light, you can forgo the auto ISO and pick it as well. Keep it as low as the shutter and aperture combination will allow.

Nope. Use them all the time. No problems.

Fuji is also bad for turquoise skies. My S2 Pro used to drive me nuts at times. You can't beat a Fuji for skin tone or Black and white. Never had a problem with my Nikon colors. Sometimes the Olympus will over saturate the reds but the skies have always been great.

I use Noiseless from Macphun. It works great w/ RAW and other formats; even smartphone photos (I use it there in Photos for Mac).

Why not explore one of the many plug-ins to Photoshop that offer a lot more accessible creativity in the form of one-click presets and "purpose-built" tools. My current favorite is Tonality from Macphun, though I've used the Nik Silver Efex before. I like Tonality's layers, brushes, textures, etc.

You're welcome.
Canon is notorious for turquoise skies.  Nikon skies appear faintly purple to me (ditto Panasonic).  Skies with my Olympus are fairly neutral, but skin tones can be hot.

This is so frustrating, I can't seem to get the birds in sharp focus when in flight.  Either just the tips of the wings are in focus, or body.
