Don't use the spherical eggplants, use the long, skinnier kind, nor too large. Slice them thinly lengthwise, lay them in a colander in layers, sprinkling each layer with salt, and let stand a couple of hours. Wash off the salt, dry, and fry the slices in small batches to golden. Assemble the parmigiana in layers, using your favorite sauce, fresh basil leaves, if available ( don't bother with dry basil) fresh mozzarella, and, of course, lots of italian Parmesan. Bake for 30 min @375.
