This is very simple setup shots you can also try this.

I choose the shutter speed to bulb mode and the aperture to 5.6 and I also used the of camera flash on the right side of balloon at approximately 2 fit distance at the 1/6 power.
For the shutter press I used the infra remote which I bought very cheap on ebay.
Now the clicking part , I hold the needle at one hand and remote on other hand and In a dark room with a black background , I open a shutter poke a needle and close the shutter at the same time , I know you need practice for this but hay you are blasting the balloon isn't it fun in itself , I will suggest you ask you child to poke the needle they will be more than happy to do that.
