Shoot in Raw + jpg (and have the display set to B&W as that is the intended outcome).

Slap on a lot of sharpening with the raw file converter (because Canon's idea of sharp and mine are obviously miles apart)...add a bit of contrast, tweek the B&W conversion, re colours and then open the resulting image in photoshop, a bit more levels and sharpening and i'm done...
