I'm thinking about getting a iMac but want to make sure these computers are good for heavy lifting programs like Photoshop or Lightroom?

Yes, plenty of power.

My method is to buy one with minimal RAM, then max it out myself.

Lots of places sell RAM cheaper than Apple does.
