Canon Rebel is a good option, you might even be able to find deal on used one.

A used rebel is an excellent option, if she is looking for something more compact the G-series (newest model is the G-11) from canon is pretty quick for a point and shoot, but none will be as quick as a DSLR. You may be able to find some G series cameras used.

The Canon "G's" are very good and I keep one in my bag at all times, along with my two pro Canon bodies. But there is no point and shoot that does not have shutter lag.

A Canon Rebel is not a point and shoot but it is a good recommendation. Many good used models available for sale.
