I'll jump in on this discussion.  Lamb chops are the best when grilled.  You working with a gas, charcoal, or wood grill?

Always wood. Up north some use charcoal, but it takes away the mood of sitting around a real fire, waiting for the coals.

Oh yeah, wood is the way to go.  Better flavor and requires more skill.  Hmmmm, need to get some hardwood.

Surrounded by the sea with hardly any natural fresh water sources, we do not have a culture of eating fresh water fish. We do sea fish on the coals too.

I am in South Africa. 
The biggest bodies of water here are dams, most of them used for homes, farms and industrial. 
Malawi, Tanzania, Uganda are countries with huge lakes, but those are thousands of miles away.

Before living where I am, I'm a southern girl.  We had BBQ nearly daily.  So anything on the grill hits it home for me.  Wood is the way to go.  Although where I live, my apartment is small so I only have a gas grill.  

Have you tried sliced potatoes with cheese and butter grilled?

i am on the southern tip of my country. The game farms and game reserves are further north. The closest game farm is about 70 miles away. The closest with lion are 150 miles away. To go to huge nature reserves will be a full day’s drive.
