Are those the real colors? They do have an HDR-like quality.

Good observation, Rob.

Each image (or subject) has qualities that need to come out. This is definitely a fine detail oriented subject.

Something more journalistic can be just as good, but have a blur in it. Like Capra's soldier dying on the hill. It isn't about the details, but the moment captured.

Sometimes the white balance needs to be dead on. Other times the wrong one works best.

Often the subject defines the best technique to use. It's all about the thing.
