I currently am a road warrior for Olan Mills, in their church directory division. Here are a couple of shots I took on location for my own use:

Composition is pretty good. Number one I would do earlier in the morning or at sunset, so you won't get harsh shadows.

Or use flash to light the wooden ceiling in picture 2? HDR would have worked nicely here as well.

By the way, what is a road warrior for Olan Mills?

If you use CS3-CS5 try the free plugin from onOne....Digital Fill Flash to lighten up the church shot.
It`s in the Photo Tools set...

See if you can afford a D700 and a 14-24. UWA shots inside a church rock.

Nice, churches can be interesting subjects to shoot. Here's one of my favorite church photos that I've taken, while scouting out a church the day before I shot a wedding there.

I definitely agree that an ultra-wide would make a more interesting shot out of this though. This was shot at 24mm, but I'd love to see what 14mm would look like ;)

nice 24mm shot.

14mm would look better. :p

Here's one I took... not a church, but it shows the 14mm effect nicely I hope:
