Aspect ratio is the shape of the rectangle. Your camera is 2:3 aspect ratio. 5x7s and 8x10s are a different aspect ratio. If you need prints of a different aspect ratio than your camera you need to leave room to crop when you shoot.

2:3 4x6, 6x9, 8x12, 10x15, 12x18, 16x24, 20x30, etc...
4:5 4x5, 8x10, 11x14 (not exactly, but close), 16x20...
5:7 5x7

I know at least with like the typical 8x10 photos will be cropped. You will have to print 8x12 to not have the photo cropped.

Yes, because 8x12 meets the 2:3 ratio whereas a 4x6 or 5x7 will not. One service I use prints "odd size" photos to match the actual image and not the "standards". Of course, matting becomes more difficult since you can't use standard off-the-shelf products.
I leave a bit of extra room and when printing myself, crop to the best image.
Remember that some camera brands use other aspect rations (4:3, etc.) so the cropping will be different.

If you plan to print canvas with the photo wrapping, you may have to include even more "space" (and watch for junk and distractions in that extra space).

Shoot, learn and share. It will make you a better photographer.

You cannot change the aspect ratio of the camera, but you can compose with it in mind so that cropping later is not a problem. You might be able to get a focusing screen with 4:5 aspect ratio marks on it.
