If I'm flying, I take only what I can carry on, (check or send ahead a tripod), if driving, I take it all....;)

When I travel, I only bring two lenses, one camera body, my filters and tripod.  Everything else stays home

:agree:   if traveling for personal, if on assignment, then I bring the roller with me

Completely depends on the purpose of the travel.  Most cases, I'll just bring the bare necessities.  I hate going through airports and cabs with a lot of gear.  The one thing that nearly 80% of the time that get's left behind is my large tripod.  I have a travel tripod that works for most needs.

It depends for me what I plan on doing. If I anticipate myself shooting mostly landscapes, I'll take gear for landscapes, if the majority is just tourist shots, well then I'll change my gear accordingly. For example I'm going away next week, and I plan on doing a food shoot, and also doing some landscape/street photography, and that calls for the majority of my gear. Luckily, I have room to put the majority of my gear, so doing so won't be a great concern. 

All in all, it depends on what you think you'll be doing, and how much room you have.

Stress.
My travels are all pretty much driving, you could not pay me enough to fly. If I went over seas I would do it the old fashioned way, on a boat. The way I look at it is that it is a vacation, and I am in no hurry. That and you could not pay me enough to fly with all of the BS associated with it.
