If a photo shoot runs long, what sort of cushion of time do you give before charging extra?

Should be in your contract so the client knows, and seems up to you to keep things on track (especially if they let you know up front they needed to be somewhere and done by a certain time). Usually people seem to allow time if someone's late based on what's reasonable where you live (traffic).

"At what point do you charge more?"....When it begins to cost you money, in lieu of earning money.....

Well that or just to have something already in print (on contract): 30 minutes.   Really that needs to be spelled out clearly on contract to keep things 'known' by client.
