Over exposed or under exposed?

If you can't get correct exposure because of crazy range of light.  Would you rather have your shot over exposed or under exposed?

If that's your only choice, then underexposed so as not to blow-out the highlights.  Once they're blown, there's no data there to recover in post. Expose to the right.  You can open up shadows in post but if you overdo it, you won't like the result.

But that's usually not your only choice.  If the dynamic range is too great, do as Kelly suggests ... bracket shots. Merge them in post ... or even in-camera if your camera will do that.

It's easier to pull detail from underexposed than over exposed. 

Canon 7D, 18-55mm, 55-250mm, 70-200mm L f/2.8, 100mm and 17-55mm f/2.8

I agree with much of what has been said. Since you are shooting with a Nikon it actually is better with getting more details from under than anything over. Canon does better at over exposures within reason, over the Nikons. But this is when I shoot multiple images, and expose for each part of the range using spot metering to measure each part. You may have to set your camera to manual exposure though, or the camera will focus on the section the point is on. Then you merge it into an HDR image.

I never mix my makes, so would not know, but I find that one processor works great with highlights, others don't. Eg: Apple's old iPhoto did great with highlights, the new Photos does not.

I don't prefer either under or over, and if I can't get a good exposure in a single shot I'll take two or more....

The best precaution for potential loss of detail is to bracket for highlights and shadows.

+1 bracket if you can, but otherwise expose to the right. It's really saved me in a couple of tricky lighting situations
