Sunday here. 
Wife's daughter is here from 1500km away, we eat and rest. 
Had a few lamb chops and boerewors (mince & spice sausage) on the coals of a fire.

Pinkie, basically we just use salt, otherwise barbecue spice too. 
Sometimes I let it lie in a bit of lemon juice for a day.
Then it goes on the coals of the fire. 
Hot coals, about 10cm from the coals. 
If the chops have a lot of fat on it, I put it fat side down on the coals to burn crisp.

It gives it a variation on the taste and it somewhat softens the meat if it is not lamb, but older sheep.
