What is it in your mind that stands out as being improved on the 70-200 2.8 over the 80-200 2.8?

A LOT sharper. Better color rendition, more contrast, less flare, VR.

buy some of those weights that have handles on them and put them on the base of your tripod, they work a treat and are much cheaper than a new tripod

The nicest tripods are usually very light, made out of Carbon Fiber. Having a heavy tripod isn't a lo to fun when you have to carry it a long way. High end carbon fibers are very stable.

I agree. Carbon fiber is light. I bought one made of carbon fiber because I am very weak in the arms, it's enough my camera bag is 25lbs.

I supposed since this is a photography site, I really should be wishing for camera equipment. But what I'd REALLY like is a Lincoln Town Car while I can still get a fairly new one.
