You had very difficult lighting to shoot,in time you`ll get it right.
Try shooting in Raw which will give you more leeway to fix the exposure,-ec will also help to lessen the blowing out.
Try bracketing your shots.
Keep shooting and don`t get overwhelmn...I was worse than you once.
