How do they do these time lapse shots any way? Are the photos taken ever 30 seconds or how many minutes apart?

I doubt it's speeded up video of this quality. To shoot video for this length of time would take up a huge amount of storage space and require very high spec computer to process it. This is my we do time-lapse, high quality photo's. I did a video recently, I took 1 picture every 10 seconds for around 3 hours producing a video that lasts about one and a half minutes. A great way to view things that are slow in super fast motion.

You could do it no problem. Trust me.

Though, for this i'd use a intervalometer and a camera, you could do it with video and it would actually be easier to process and take less processing power.
