Do I need to check for a hired model's ID?

If you are hiring a female model who states to be for example 20 years old and signs a models release form that states they are over 18 years of age.  Now if it turns out that you hired them, and they were not 18 when you hired them, yet they signed contract saying they were 20.   Would you be liable for not asking to see ID?  Or would they be liable because they lied and misrepresented themselves?

That's not really something you want to chance. Check their ID, even if it seems a bit much. You could get in some serious trouble otherwise.
